Meridian Munchies: San Marcos

San Marcos Mexican Restaurant, a restaurant for all but a second home to me. San Marcos is a place that I grew up working, learning, and enjoying time with my father; it is more to me than a family business. To me it is a symbol of all the hard work put in by both of my parents. Both of them left their homes in order to be able to provide a better life for their future family. My father came to the US with a goal of finding a job that would meet his needs. His idea was never really going into the food industry, but it all started with his first job. He began as a dishwasher in a restaurant and remained there for a couple of years. From there he went on to another restaurant where he became a cook and later became the manager. Through his hard work and endeavors in the jobs that he held, he discovered his passion for the food industry. So he decided to embark on a new mission fueled by this new passion. He moved to Meridian, Mississippi, and with the help of a friend, opened a restaurant in College Park. From day to night, he worked, fueling his dream with ambition and passion. He always kept one thing in mind: his family. Later with the great support of his community, he was able to buy land and build his own restaurant where it stands today. From a young age, my sisters and I followed him to work until it became second nature to be present in the family business. Today, you can always be sure to find one of us in there always representing what my parents taught us to be. My favorite meals and also those that my family enjoys a lot are the Quesadilla Supreme and the Chicken Fajitas. These meals can most often be shared with a partner so it’s an obvious choice when we go and eat together. To say that San Marcos is the best restaurant in Meridian, Mississippi may seem like a very biased statement but for me it is. Not only has it provided for my family and me, but it has also crafted me into the person I am today and a reflection of my parents whom I love and am very proud of.
